Teppanyaki is a style of Japanese cuisine from the words “teppan” – meaning, “iron plate” – and “yaki,” which means “grilled,” “pan-fried,” or “boiled.” The word literally translates to “grilling on an iron plate.” A teppanyaki is a meal consisting of meat, seafood, and noodles cooked on an iron plate.

2. Okonomiyaki at Okonomiyaki Teppanyaki Emmaru


One of the best places to experience okonomiyaki in Japan is Fukuyama. Okonomiyaki is a pan-fried dish, like a pancake, made with wheat flour batter, cabbage, meat, and seafood, topped with okonomiyaki sauce, katsuobushi, aonori, Japanese mayonnaise, and pickled ginger.

Fukuyama is almost a coastal destination so not trying the seafood it offers is a big miss. A famous seafood dish here is tai-meshi or sea bream rice. This rice recipe consists of a flavorful broth of dashi, soy, sake, and bonito, then the sea bream, of course. Chitose is a restaurant that serves one of the best tai-meshis in town.

Another seafood that’s a must-try in Fukuyama are oysters, especially in winter. Japanese oysters are known for their rich and briny taste with hints of sweetness. Their umami flavor from the fusion of seawater and freshwater is noticeable. 5. Onomichi Ramen at Onomichi Ramen Iccho


The neighboring city of Onomichi is just a few minutes away from Fukuyama. If you suddenly craved Onomichi’s ramen while in Fukuyama, head to Onomichi Ramen Iccho.


Onomichi ramen is distinct from other ramens as this is made from chicken bones and fresh fish from the Seto Inland Sea, cooked to form the clear, soy sauce-based soup, before filling it with tender and succulent barbecued pork or chashu, fresh green onions, and crispy bamboo shoots to form a taste that will take your breath away.
